Being vegetarian it regularly annoys me that many pubs and crap restaurants see it fit to serve up sub standard vegetarian lasagne. As a result many vegetarians end up avoiding lasagne altogether but I aim to restore your faith! My VEGETABLE LASAGNE recipe originates from the back of a lasagne sheet packet years back when I was a kid, my mother saves these things, I don’t even think the brand of lasagne sheet still exists. We’ve changed it, added some essential ingredients to balance the vegetarian diet and basically make it a hearty meal. My sister is vegan so the cheese sauce and the parmesan can be replaced with vegan alternatives and as I avoid wheat I use wheat free lasagne sheets (tricky to find but available!). It’s certainly special enough for parties and also accepted by the meat eaters in my family, so go on give it a go.
I serve this with a green salad tossed with olives and balsamic vinegar. The lasagne can be prepared up to 24 hours before cooking and stored in the fridge before cooking.
Ingredients: 1 tbsp, olive oil 1 onion, chopped ½ green pepper diced ½ red pepper diced 1 large courgette, thickly sliced 4 oz mushrooms, sliced 2-3 cloves of garlic ½ 8oz can of sweetcorn 2 oz cooked green lentils (I boil these in a little water for 10 mins) ½ pint vegetable stock ½ 14oz can of tomatoes dried mixed herbs (oregano/thyme works best) salt and pepper to taste 1 pint of cheese sauce (let me know if you need the recipe) lasagne Sheets parmesan cheese, grated
Method: 1. Set oven to 180c/gas mark 5 2. Fry the onion until soft 3. Add the peppers and cook for a few more minutes 4. Add the remaining ingredients for veggie sauce. Season to taste. 5. Simmer for 20 minutes 6. Spread a thin layer of the cheese sauce over the base of a large oven proof dish (I use 8"x 8" size) 7. Cover with a layer of lasagne sheets and then ½ the vegetable sauce mix. 8. Repeat ending on lasagne sheets. 9. Cover with the remaining cheese sauce (this ensures the edges are sealed) 10. Sprinkle with parmesan cheese. 11. Cook in oven for 35 – 40 minutes until golden and bubbling
